PROCESS

I Harvesting: Our plantation cycle goes from 6 to 8 years which is the maximum period
in which the agave reaches its full maturity and it’s ready for the jima (trim).

I Jima: The jima (trim off) is the process they go through when we chopped the outer
leaves of the agave plants leaving only the soft center the agave piäa (heart) once the
pifias are already without the outer leaves and chopped by halves we take them to our
factory.

Formulation and Extraction: The agave is boiled in order to extract.

Fermentation: Our time of fermentation is 72 hours approximately.

Distillation: As a result of the first distillation we obtain an ordinary tequila, which is
taken into big steel distillations tanks or columns to the second distillation process or
rectification where the ordinary tequila becomes White Tequila.

Maturation: We storage our Tequila in big barrels of 200 liters made of white oak for a
period of time, of at least 4 months.

Bottle Packing: We left in every single one of our bottles a part of ourselves and a part
of our land.
